- 1/2 medium red onion, sliced
- 1 red bell pepper, sliced
- 1 small zucchini, sliced
- 2 tsp safflower oil
- 1/8 tsp salt
- 1 cup whole wheat penne, cooked
- 1/4 cup crumbled reduced fat feta cheese

Step 1
Drizzle vegetables with oil and sprinkle with salt. Roast in a nonstick baking pan in a 400 degree oven, until soft and lightly browned, about 20 min. Toss with the penne and feta.
