Ingredients

  • Meatballs:
  • 1 1/2 lbs Ground Meat
  • 1 Onion, finely diced
  • 1/3 cup Breadcrumbs
  • 2 Eggs
  • 1 Tbsp Dried Parsley
  • 1 clove Garlic, minced
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 1 tsp Paprika
  • 2 Tbsp Oil
  • 2 cups BBQ Sauce
  • Couscous:
  • 4 cups Couscous
  • 4 1/2 cups Boiling Water
  • 2 Tbsp Oil
  • 1 Onion, diced
  • 1 tsp Salt
  • 1/2 tsp Black Pepper

Preparation

Step 1

Combine meatball ingredients and shape into 1" balls.
Oil a baking dish and set oven rack 4" from heat.
Broil for 5-6 minutes, glaze with BBQ sauce, and broil another 5-6 minutes.

Couscous:
Heat oil in a large saucepan over a medium flame.
Add onions and saute until translucent.
Add couscous and coat in oil.
Pour in hot water and bring to a boil.
Season with salt and pepper.
Stir and cover. Reduce to a simmer and cook until all water has been absorbed.
