Ingredients
- 2 cups warm water
- 1 pkg yeast
- 2 tsp sugar
- 1 tbs kosher salt
- 6 cups flour
- 1/2 cup olive oil
- cornmeal
- 2-3 tbsp olive oil

Step 1
1. Stir together first 3 ingredients in a small bowl. Let stand 5 minutes.
2. Stir together salt and 5 1/2 cups flour in a large bowl; make a well in center of mixture. Pour yeast mixture and 1/2 cup olive oil into all and stir to form a soft dough.
3. Turn dough out onto a lightly floured surface and knead 5 minutes, gradually kneading in remaining 1/2 cup flour. Place in a well greased bowl, turning to grease top.
4. Cover and let rise in a warm place - 1 hour and 30 minutes or until doubled in bulk.
5. Punch dough down. Turn dough onto lightly floured surface, cover and rest 5 minutes. Shape dough into 8 balls. Roll in to 6-8 inch disks. Light sprinkle 2 large baking sheets with cornmeal. Place 2 rounds on each sheet. Lightly brush with olive oil.
