Ingredients
- 1 tblsp. olive oil
- 2 large leeks, thinly sliced (about 3 c.)
- 1/2 c. chopped carrot
- 5 c. chicken broth
- 1 10 oz. package frozen lima beans, thawed
- 5 oz. green beans, cut into 1" pieces
- 8 oz. asparagus, cut into 1" pieces
- 2/3 c. thinly sliced basil, divided
- salt
- pepper

Preparation
Step 1
1. Heat oil in large saucepan over medium heat.
2. Add leeks & carrots & saute until vegetables are tender, about 8 minutes.
3. Add broth & bring to a boil.
4. Add lima beans & green beans & simmer until vegetables are tender, about 8 minutes.
5. Add asparagus & 1/3 c. basil & simmer until all vegetables are tender, about 8 minutes.
6. Season soup with salt & pepper.
7. Stir in remaining basil.
