Ingredients

    tblsp. olive oil

  • 2

    large leeks, thinly sliced (about 3 c.)

  • ½

    c. chopped carrot

  • 5

    c. chicken broth

  • 1

    10 oz. package frozen lima beans, thawed

  • 5

    oz. green beans, cut into 1" pieces

  • 8

    oz. asparagus, cut into 1" pieces

  • c. thinly sliced basil, divided

  • salt

  • pepper

Directions

1. Heat oil in large saucepan over medium heat. 2. Add leeks & carrots & saute until vegetables are tender, about 8 minutes. 3. Add broth & bring to a boil. 4. Add lima beans & green beans & simmer until vegetables are tender, about 8 minutes. 5. Add asparagus & 1/3 c. basil & simmer until all vegetables are tender, about 8 minutes. 6. Season soup with salt & pepper. 7. Stir in remaining basil.
