Herbed Roquefort Biscuits

Found this in my Aunt's recipe collection from an old 1984 Southern Living magazine. A fancy way to spice up a basic biscuit recipe.

Ingredients
- 3 oz. Roquefort cheese, crumbled
- 2 Tbsp. minced green onion tops
- 1 tsp. dried whole basil
- 1/2 tsp. dried whole thyme
- 2 c. all-purpose flour
- 1 tbsp. baking powder
- 1/2 tsp. salt
- 1/4 tsp. baking soda
- 1/4 c. plus 2 tbsp. cold unsalted butter, cut into pieces
- 3/4 c. buttermilk

Step 1
Combine first 4 ingredients in a small bowl; set aside.
Combine flour, baking powder, salt, and soda in a medium bowl. Cut in cheese mixture and butter with a pastry blender till mixture resembles course meal; stir in buttermilk. Turn dough out onto a floured surface, and knead lightly 7-8 times.
Roll dough to 1/2" thickness; cut with a 2 1/2" biscuit cutter. Place biscuits on a lightly greased baking sheet. Bake at 450 degree for 13-15 min. till golden brown.
