Ingredients
- 1 lg onion, finely chopped
- 2 celery ribs, finely chopped
- 1 med green pepper, finely chopped
- 1 med sweet red pepper, finely chopped
- 1 tBL canola oil
- 1 garlic clove, minced
- 3 C cooked chicken breast
- 1 can (10-3/4oz) cream of chicken soup, undiluted
- 1 can (10oz) diced tomatoes & green chilies, undrained
- 1 TBL chili powder
- 12 corn tortillas (6") cut into 1" strips
- 2 C (8oz) shredded cheddar cheese, divided
- CAN ADD JALAPENOS IF WANT TO ADD A LITTLE MORE HOTNESS

Preparation
Step 1
FREEZES WELL
in lg. nonstick skillet, coated w/ cooking spray, saute onion, celery & pepper in oil until crisp-tender
add garlic
cook 1 min longer
stir in chicken, soups, tomatoes & chili powder
line bottom of 3-QT baking dish w/ half of tortilla strips
top w/ half of chicken mixture & 1 C cheese
repeat layers
bake, uncovered @ 350 for 30-35 min or until bubbly
