Spaghetti Carbonara

Ingredients
- 6 slices thick cut bacon, cut into 1/2" pieces
- 2 TBL olive oil
- 3 cloves garlic, crushed
- 1/2 tsp minced fresh rosemary
- 2 red jalapeno peppers, seeded & minced
- 1/4 C cognac or brandy (optional)
- 12 oz spaghetti
- 3 lg. eggs
- 3/4 C freshly grated parmesan cheese, plus more for garnish
- 1/2 Chly grated pecorino romano cheese
- 2 TBL chopped fresh parsley
- freshly grd. pepper

Preparation
Step 1
bring lg. pot of salted water to boil
combine bacon, olive oil, garlic, rosemary, jalapenos & 1/4 C water in lg. skillet
cover over med high heat, stirring occacionally, until water evaporates & bacon crisps - abt 12 min.
discard garlic
add cognac & cook until it evaporates
meanwhile, cook spaghetti in boiling water as directed
mix eggs, cheeses, parsley & 1 tsp pepper in bowl
drain pasta, reserving 1/4 C cooking water
return skillet to med high heat
add pasta
toss until heated through , 1-2 min
remove from heat
whisk reserved pasta water into egg mixture, then quickly pour over pasta & toss to gently cook eggs & make creamy sauce
garnish w/ reserved bacon mixture & more parmesan
