Crustless Broccoli Quiche

Ingredients
- 2 tbsp. olive oil
- 1 cup fresh broccoli, finely chopped
- 1/2 cup red pepper, chopped
- 1 cup onion, sliced thinly and then chopped
- 1 1/2 cups mozzarella cheese, grated
- 4 eggs
- 2 cups milk
- 1/4 tsp. pepper
- 1/2 tsp. salt
- 1 tsp. dried basil

Step 1
Put a large frying pan on medium-high heat. Add olive oil. Add the broccoli, red pepper and onions. Sauté until just soft, about 5 minutes. Drain and discard excess liquid (if any). Place the vegetables in a deep 9 inch pie plate.
Sprinkle the grated cheese over the vegetable mixture.
In a large mixing bowl, whisk the eggs, milk, pepper, salt and basil. Whisk until frothy. Pour over the cheese in the pie plate.
Bake at 350 degrees for 40 minutes, or until the center has set. Remove from the oven. Serve warm.
