  • 3/4 cup all purpose flour
  • 1/3 cup sugar
  • 1/4 cup whole wheat flour
  • 1 tsp baking powder
  • 1 tsp apple pie spice
  • 1/2 tsp salt
  • 1/8 tsp baking soda
  • 1/4 cup butter
  • 1 egg, lightly beaten
  • 1/3 cup plain low fat yogurt
  • 2/3 cup shredded unpeeled apple
  • 3 tbsp sugar
  • 1/3 tsp ground cinnamon

Coat six muffin cups with cooking spray, and set aside. In a medium bowl, stir together all purpose flour, 1/3 cup sugar, whole wheat flour, baking powder, apple pie spice, salt and baking soda. Using a pastry blender, cut in butter until mixture resembles fine crumbles.

In a small bowl, combine the egg, yogurt. Add egg mixture to flour mixture; stir just until combined. Gently fold in apple.

Spoon batter into a pastry bag fitted with a 1/2" round tip. Pipe batter into muffin cups. Lightly coat a sheet of plastic wrap with cooking spray. Place coated side down on the batter. Chill 2-24 hours.

Preheat oven to 350 degrees F. Remove plastic wrap. Bake about 15 mins or until doughnuts are light golden brown and spring back when lightly touched. Cool in pan on a wire rack for 5 mins. Carefully invert pan to remove doughnuts.

In a small bowl, combine 3 tbsp sugar and the cinnamon. As soon as doughnuts are cool enough to handle, dip into cinnamon mixture to coat. Serve warm.
