Thai Pork Pizza

Ingredients
- 2 teaspoons vegetable oil
- 2 boneless pork chops (3/4 inch thick)
- Salt and pepper to taste
- 1 package (15 ounces) pizza crust (such as Boboli)
- 1/2 cup Thai peanut sauce
- 1/2 cup thinly sliced pea pods
- 1/4 cup shredded carrots
- 1 cup shredded mozzarella cheese
- Chopped fresh cilantro leaves (optional)

Preparation
Step 1
Preheat oven to 425 degrees.
Place oil in a nonstick skillet and heat over medium-high heat.
Sprinkle pork chops with salt and pepper. Add the pork chops to the skillet and cook 4 minutes until browned and internal temperature reaches 145 degrees. Let rest 3 minutes.
While pork chops cook and rest, place pizza crust on a baking sheet. Spread peanut sauce onto crust. Sprinkle with pea pods and carrots.
Cut pork into thin slices. Arrange on pizza crust. Cover with cheese.
Bake in preheated oven 12 to 14 minutes or until cheese is melted and bubbly. Let stand 5 minutes before slicing. Sprinkle with cilantro, if desired.
Tips: Use 1 ½ cups leftover cubed cooked pork instead of pork chops. To save time, buy preshredded cheese and carrots.
