Ingredients

  • 1 12 oz. pork tenderloin
  • 2 15 oz. cans of hominy, rinsed and drained
  • 1 16 oz. jar salsa verde
  • 1 14 oz. can reduced sodium chicken broth
  • 2 4 oz. cans diced green chile peppers, undrained
  • 1 cup coarsely chopped onion
  • 1 tbsp ground cumin
  • 4 cloves garlic, minced
  • 1 tsp dried oregano, crushed
  • 1/4 tsp crushed red pepper
  • Snipped fresh cilantro
  • Crispy tortilla strips

Step 1

Trim the fat from the meat. Cut into 1/2" pieces. Set aside. In a slow cooker, combine the hominy, salsa, broth, chile peppers, onion, cumin, garlic, oregano and crushed red pepper. Stir in the meat.

Cover and cook on low heat setting for 6-7 hours or on the high heat setting for 3-3.5 hours.

Stir in cilantro just before serving. Garnish with crispy tortilla strips.
