Ingredients
- 1 box vanilla cake mix *
- 2 lb. Ricotta cheese
- 3/4 cups sugar
- 4 eggs
- 1 tsp. vanilla
- 1 tsp. almond *
- Small box vanilla instant pudding *
- 8 oz. Cool Whip
- 1 cup milk

Step 1
Mix cake as directed on box. Grease and flour 9x13 inch pan. Pour batter in pan. Mix Ricotta cheese, sugar, 4 eggs, and vanilla until blended. Pour evenly over vanilla cake batter. Bake at 350°F. for 1 hour to 1 hour and 15 minutes (Ricotta filling will sink to bottom of pan as it bakes). Completely cool! Mix vanilla instant pudding and milk and fold in thawed Cool Whip. Spread on top of cake. Refrigerate a few hours before serving.
*Original recipe uses choc. cake mix and choc instant pudding instead of the vanilla and NO Almond extract.
