Brie, Honey and Pear Hot Pockets

- 1 large ripe pear, peeled and diced
- 1 tablespoon honey
- 1/8 teaspoon red pepper flakes
- 8 ounces brie cheese, rind removed, sliced into large chunks
- 2 sheets puff pastry, thawed
- 1 large egg, beaten

Preparation
Step 1
Add the pear to a medium bowl. Drizzle with honey and sprinkle with red pepper flakes. Stir together to combine.
Line a rimmed baking sheet with parchment.
Lightly dust your work surface with flour. Unfold the puff pastry and cut along the seam to make 3 equal pieces. Repeat with the second sheet.
Lay the 6 strips on the parchment-lined baking sheet. Brush the edges with the beaten egg. Divide the pear filling and brie between the puff pastry pieces, placing the filling on one side of the strip. Fold the dough over itself in half to enclose the filling. Use your fingers to press the edges to seal, then use a fork to press and seal the edges closed.
Place in the freezer for 10 minutes to firm. Preheat oven to 400 degrees.
Bake for 20 minutes, until golden. Let cool for 10 minutes before serving.
