Ingredients

  • 4 slices bacon
  • 4 oz. sharp Cheddar cheese, grated
  • 1/4 c low fat sour cream
  • 2 scallions, chopped
  • Kosher salt and freshly ground pepper
  • 1 10 oz. package broccoli florets, thawed and squeezed of excess moisture then cut into 1" pieces
  • 1 lb pizza dough
  • Olive oil, for brushing

Heat oven to 400 degrees F. Line a baking sheet with parchment paper. Cook the bacon in a large skillet over medium heat until crisp, 6-8 mins. Transfer to a paper towel lined plate; break into pieces when cool.

In a large bowl, combine the Cheddar, sour cream, scallions, 1/4 tsp salt and pepper each. Fold in the broccoli and bacon.

Shape the pizza dough into a 14" circle, then cut into 8 triangles.

Divide the broccoli mixture among the triangles. Starting at the wide end, roll the dough around the filling.

Transfer the rolls to the prepared baking sheet, brush the dough with oil and bake until golden brown, 20-25 mins.
