Preparation
Step 1
Have an 8x8 pan ready that holds 6 cups of liquid. Combine 1 cup of sugar with half cup of water in saucepan. Bring to a boil. Stirring at first. Then swishing it around until mixture turns golden brown. Carefully pour into pan and tip to coat bottom. Set pan aside while you make custard.
Beat eggs until they are light yellow and thick. Add milk, sugar, salt and pineapple juice and beat thoroughly.
Strain mixture into baking pan.
Find a larger pan that will contain custard pan with at least an inch to spare on all 4 sides. Place custard pan inside. Put in oven. Pour hot water in the larger pan to immerse custard pan halfway. Bake one hour or until knife in center comes out clean.
Remove from water and cool at least 10 minutes. Turn out on plate with deep lip so sauce doesn't spil. Sprinkle with crushed pineapple, caramel sauce and whipped cream.
