Ingredients
- SATAY SAUCE: SATAY SAUCE:
- 3- 3/4 cup H2O
- 2 ea. Zested Oranges
- 2 cup Jasmine Rice-rinsed
- 2 Tbs Cooking oil
- 1- 1/2 lbs Chicken Breast
- 3 cloves Crushed Garlic
- 1 med. Sliced Yellow Onion
- 1 med. Red Pepper-sliced
- 1 cup Shred3 Carrots
- 6 Scallions-2" pieces
- 1 cup Snow Peas
- 4 Tbs Chunky Peanut Bttr.
- 3 Tbs Dark Soy
- 3 Tbs Honey
- 1 " Ginger Root-minced
- 1 clove Garlic-crushed
- 1 tsp Red Pepper Flakes
- 1/2 ea. Orange-juiced

Preparation
Step 1
1.) Heat H2O w/ Zest to boiling. Add rice, return to boil, stir. Cover pot & reduce heat to simmer. Cook rice until tender, ~ 18 mins. Fluff w/ fork.
2.) Heat Lrg. skillet over High heat. Add Chicken, Garlic & Onion, stir-fry 3 minutes. Add remaining veggies & stir-fry 5 minutes more.
3.) Heat all ingredients for sauce together in small pot over Low heat, stirring sauce until all ingredients are combined.
4.) Transfer stir-fry to a large platter & pour sauce evenly over Chicken & Veggies.
5.) Place Chicken on platter and serve rice as a companion.
