Salad - Chicken 'Blacken Cajun'

Ingredients
- DRESSING
- 1/4 cup Fat Free Mayo
- 1/4 cup Grey Poupon
- 1/4 cup Honey
- 1 Tbs PrePared Mustard
- 1 Tbs White Vinegar
- 1/8 tsp Paprika
- CHICKEN MARINADE
- 1 cup H2O
- 3 Tbs Lime Juice
- 2 Tbs Soy Sauce
- 1/3 Tbs Worcestershire
- CAJUN SPICE BLEND
- 1/3 Tbs Salt
- 1 tsp Sugar
- 1 tsp Paprika
- 1 tsp Onion Powder
- 1 tsp Black Pepper
- 1/2 tsp Garlic Powder
- 1/2 tsp Cayenne Pepper
- 1/2 tsp White Pepper
- SALAD
- 8 cups IceBerg Lettuce
- 1/2 cup Shred3 Carrot
- 1/2 cup Shred3 Cheddar Cheese
- 1/2 cup Shred3 Mozzarella Cheese
- 1 HardBoiled Egg - sliced
- 2 Boneless Chicken Breast
- 2 Tbs Light Butter

Preparation
Step 1
1.) Make Dressing &by combining all in Sm. bowl Refrigerate until needed.
2.) Combine H2O, Lime Juice, Soy Sauce, & Worcestershire in Med. bowl, & stir. Add the Chicken Breasts to the marinade, cover bowl & keep in Refrigerator for several hours. Overnight is best.
3.) When Marinated, Preheat a frying pan or skillet over Med./ High heat. Also, preheat Grill to Med./ High heat.
4.) Combine all Cajun Spices in a Sm. bowl. Sprinkle a tsp. of spice blend over one side of each breast. Cover entire surface of Chicken w/ spice.
5.) Melt Butter in Hot pan, then sear the breast for 2- 3 min. on side w/ spices. While cooking, spice other side, w/ tsp. of spice. & cook for another 2- 3 min. on other sides. The Surface should be blackened.
6.) Finish chicken on Grill for 2- 3 min. until they are done.
7.) Prepare salad while cooking chicken, then salad w/ the carrots & then mix the cheeses. Then mix the two. Add HardBoiled Egg.
8.) Top Salad w/ Sliced Chicken Breast.
