Ingredients
- 2 1/2 pounds boneless skinless chicken thighs, cut into 1-inch pieces
- 1 cup chopped onion
- 1 cup chopped celery
- 1 cup chopped carrot
- 1 (28-oz.) can diced tomatoes, un-drained
- 1 (15-oz.) can black beans, drained and rinsed
- 1 cup low sodium chicken broth
- 2 teaspoons chili powder
- 1/2 teaspoon salt
- 1/4 cup buffalo wing sauce
- Crumbled blue cheese (optional)

Preparation
Step 1
In a slow cooker, combine all ingredients, except wing sauce and cheese. Cover and cook on LOW for 8 to 10 hours. Stir in buffalo wing sauce and sprinkle with cheese, if desired.
SERVING SUGGESTION: Serve a big salad on the side. Add some warm corn muffins and butter.
VEGETARIAN: Use non-breaded faux chicken patties and vegetable broth.
KOSHER: Omit the optional blue cheese OR use soy cheese
GLUTEN FREE: Make sure tomatoes, black beans, chicken broth and wing sauce are gluten free.
