Ingredients

  • 1 tablespoon olive oil
  • 3/4 cup chopped yellow onion
  • 3 cloves garlic, pressed
  • 3/4 pound turkey Italian sausage, removed from casing
  • 9 cups low sodium beef OR chicken broth
  • 3 (15-oz.) cans cannellini OR white beans, un-drained
  • 1 1/4 teaspoon dried thyme
  • Salt and pepper, to taste

Preparation

Step 1

In a Dutch oven or large soup pot, heat the oil over medium heat; add onion and garlic and saute for 5 minutes. Add sausage and brown for about 5 minutes. Add broth, beans and thyme; bring to a boil then reduce heat, cover and simmer for about 45 minutes; season with salt and pepper to taste.

SERVING SUGGESTION: Serve a big spinach salad on the side.
VEGETARIAN: Use soy sausage OR TVP crumbles and use vegetable broth.
KOSHER: No changes necessary.
GLUTEN FREE: Make sure sausage, broth and beans are gluten free.
