Ingredients
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon ground cumin
- 1/2 teaspoon chili powder
- 1/2 teaspoon cinnamon
- 1 pound lean pork tenderloin
- 1 tablespoon olive oil
- 1/2 cup packed dark brown sugar
- 1 tablespoon finely chopped garlic
- 1/2 tablespoon hot sauce

Preparation
Step 1
Preheat oven to 350 degrees. In a small bowl, combine salt, pepper, cumin, chili powder, and cinnamon; rub mixture into pork. Heat the oil in a large oven-proof skillet over medium high heat until hot; brown pork, turning, about 4 minutes total. In a small bowl, combine brown sugar, garlic and hot sauce; pat mixture on top of the pork; roast for 25 to 30 minutes. Let pork stand in the skillet at room temperature for 10 minutes before slicing.
SERVING SUGGESTION: Steamed new potatoes and steamed broccoli.
