- for the dressing:
- 2 large or 4 small firm but ripe pears
- 2 baby gem lettuces, leaves separated
- 200 g Stilton Cheese
- handful of walnuts, crushed
- 6 tbsp olive oil
- 2 tbsp red wine vinegar
- salt and freshly ground black pepper

Step 1
Wash and finely slice the pears, removing the cores. Wash, dry and arrange the lettuce leaves on four plates, then place the sliced pear pieces on top. Crumble over the Stilton and crushed Walnuts.
To make the dressing, whisk the oil and vinegar together in a bowl, then season to taste with salt and pepper. At the last minute, drizzle the dressing on the salad and serve immediately.
this salad also works well with brie. Just chop the cheese into small chunks and scatter over the pears. For a more pronounced nutty flavor, try using a little walnut oil in the dressing instead of olive oil.
