Ingredients

  • 1 chicken ( about 1 1/2 - 1 3/4 lb)
  • 4 T butter, melted
  • 1 T lemon juice
  • 1/2 t dried oregano
  • 1/2 t dried rosemary
  • 1/4 t dried sage
  • 1/4 t salt
  • 1/4 t black pepper

Preparation

Step 1

Preheat oven to 450*.
Cut the chicken in half.
Arrange chicken, skin side up, in a roasting pan.
Combine butter, lemon juice, oregano, rosemary, sage, salt & black pepper in a small bowl & mix well.
Brush the chicken with the butter mixture.
Roast until juices run clear, about 20 mins.
Broil 6 " from heat for 3 mins.
