Ingredients

  • 1/4 c unsalted butter
  • 1/2 red onion, chopped
  • 2 cloves garlic, minced
  • 1/4 tsp red pepper flakes
  • 1/4 tsp kosher salt
  • 1 3/4 c heavy cream
  • 1 c shredded Parmesan
  • 1 tsp ground nutmeg
  • 1/2 c sour cream
  • 10 oz frozen, chopped spinach, thawed, squeezed dry
  • 1/4 tsp pepper
  • 1/2 c French fried onions, optional

Preparation

Step 1

Heat oven to 375°F. Butter 8" square baking dish.

In skillet over medium heat, melt 1/4 cup butter. Add red onions, garlic, pepper flakes, and 1/8 tsp of salt; cook 3 min., stirring often.

Add cream, Parmesan, and nutmeg; cook until cream starts to bubble, stirring often.

Remove from heat; stir in sour cream, spinach, pepper, and remaining salt.

Pour into baking dish, sprinkle with fried onions, if desired.

Bake for 15-20 min. or until golden.
