SALAD SPINACH-STRAWBERRY SALAD

Ingredients

  • 1 TB cider or balsamic vinegar
  • 2 tsp vegetable oil
  • 1 tsp Dijon mustard
  • 1/2 tsp honey
  • Pinch crumled dried rosemary
  • Freshly ground pepper and salt
  • 1 10oz bag spinach rinsed and torn
  • 2 cups strawberries, hulled and halved
  • 1/4 sweet onions like Vidalia, very thinly sliced
  • 2/3 cup crumbled aged goat cheese or feta cheese
  • 2 TB sliced almonds, lightly toasted

Preparation

Step 1

To toast almonds, heat oven to 350, place almonds on a cookie sheet. Bake until lightly brown, about 5 mins.

Whisk together vinegar, oil, mustard, honey, rosemary, epper and salt in a large bowl. Add the spinach, strawberries and onions; gently toss to coat. Sprinkle salad with cheese and almonds and serve at once.
