Ingredients
- 1 1/2 c. granulated sugar, divided
- 2 Tb. water
- 2 eggs
- 3 egg yolks
- 1 Tb. vanilla extract
- 2 c. milk

Step 1
Preheat oven to 350 degrees. Combine 1 cup sugar with water in a heavy pan over medium heat. Swirl pan occasionally unitl sugar begins to melt and turns golden (do not stir mixture and do not increase temperature). Pour caramel into eight warmed custard cups. Tilt the cups to coat bottoms and sides; set aside.
Beat eggs, yolks, remaining 1/2 cup sugar and vanilla until well blended. Slowly beat milk into egg mixture. Pour mixture into caramel-lined cups. Set cups in a 13x9x2" baking pan and add boiling water to come half way up the sides of the cups. Bake 45 minutes or until custard is set in center. Serve warm, or chilled.
