Ingredients

  • 2 sweet potatoes, peeled and sliced
  • 2 Tb. butter
  • 1/2 c. packed brown sugar
  • 2 Tb. light corn syrup
  • 1 Tb. unsweetened pineapple juice
  • 1/8 tsp. ground allspice
  • 2 c. miniature marshmallows

Step 1

Arrange sweet potato slices, slightly overlapping, in 10" pie plate. Set aside. In 1-cup measure, microwave butter at HIGH for 45 seconds to 1 minute, or until melted. Stir in remaining ingredients, except marshmallows. Pour evenly over potatoes. Cover with plastic wrap.

Microwave at HIGH for 8-11 minutes, or until tender, rotating dish once. Remove plastic wrap. Sprinkle potatoes with marshmallows. Place under broiler, 8" from heat. Broil just until marshmallow are light golden brown, about 1 minute.
