Ingredients

  • 3 cloves garlic, pressed
  • 1/2 cup lime juice
  • 1/2 cup grapefruit juice
  • 2 1/2 tablespoons low sodium soy sauce
  • 1/2 teaspoon hot pepper sauce
  • 1 pound lean pork tenderloin

Preparation

Step 1

In a large zipper-topped plastic bag, combine garlic, juices, soy sauce and hot pepper sauce; allow mixture to sit at room temperature for 30 minutes to 1 hour for flavors to blend. Add pork tenderloin to marinade; seal bag and turn to coat evenly; refrigerate for at least 1 1/2 hours but no longer than 5 hours, turning occasionally. Preheat oven to 450 degrees. Drain pork and reserve marinade. Roast pork for 10 minutes, then turn. Reduce oven temperature to 325 degrees and continue to roast until internal temperature of pork reaches 145 to 150 degrees. Boil reserved marinade for 3 minutes; reduce heat and simmer for 10 more minutes. Serve sliced pork topped with marinade.
