This is absolute best method of cooking your steak so you don't get the bullseye affect. For 2 people, just up the quanity as much as you like. My friend did a whole bunch of them for a party and just as good. You could probably also just use a whole tenderloin and do it the same way.

Ingredients

  • 2 6-8 oz of beef tenderloins (or another steak of your choosing)
  • Kosher salt
  • Cracked pepper
  • Meat string
  • Butter or Canola oil

Preparation

Step 1

Preheat oven to 275. Using meat string, tie meat around outer edges and salt and pepper both sides and edges.
Roast in oven on rack over sheet pan for about 45min -1 hour until meat internal temp reaches 125. Then pull from oven and let it rest for 10 -15 min. until meat internal temp reaches about 135.
In meantime, heat cast iron or non-stick skillet and pan.
Sear meat on both sides about 1 minute each either in dry pan or use a little canola oil or butter. You do not let the meat rest again but can serve it immediately.
The temps listed here are for a perfect medium doneness. Just cook longer or shorter for your preference.
