Ingredients

  • 2 1/4 tsp salt, divided
  • 1 3/4 tsp ground black pepper
  • 6 (4 oz) cube steaks
  • 38 saltine crackes (1 sleeve) crushed
  • 1 1/4 c flour
  • 1/2 tsp baking powder
  • 1/2 tsp ground red pepper
  • 4 3/4 c milk
  • 2 large eggs
  • 3 1/2 cups peanut oil

Preparation

Step 1

1. Sprinkle 1/4 tsp each salt and black pepper over steaks.

2. Combine cracker crumbs, 1 c flour, baking powder, 1 tsp salt, 1/2 tsp black pepper, and red pepper.

3. Whisk together 3/4 c milk and eggs. Dredge steaks in cracker crumb mixture, dip in milk mixture and dredge in cracker crums again.

4. Preheat oven to 225'. Pour oil into skillet, heat oil to 360' (do not use nonstick skillet). Fry steaks 10 minutes one side in small batches. Turn and fry each batch on opposite side 4 - 5 minutes or until golden brown.

5. Remove to a wire rack on a jelly roll pan. Keep steaks warm in preheated oven.

6. Carefully drain the oil, saving the crunchy bits for the gravy.

7. Whisk together remaining 1/4 c flour, 1 tsp salt, 1 tsp black pepper and 4 cups milk. Pour mixture into reserved drippings in skillet. cook over medium high heat. Whisking constantly, 10-12 minutes or until thickened. Serve this gravy with the fried steaks and mashed potatoes!
