Ingredients

  • 4 skinned and boned chicken breasts
  • 1 tsp salt
  • 1/2 tsp pepper
  • 2 T vegetable oil
  • 3/4 c freshly grated parmesan cheese
  • 1/2 c chopped toasted pecans
  • 1/2 c chopped celery
  • 1/3 c chopped green onions
  • 3/4 c mayonnaise
  • 2 T spicy brown mustard
  • 1 garlic clove, pressed
  • garnish: curly leaf lettuce

Preparation

Step 1

1. Sprinkle chicken with salt and pepper. Cook chicken in hot oil in a large skillet over medium-high heat 7-8 minutes on each side or until done. Cool and chop chicken into bite sized pieces.

2. Stir together chopped chicken, cheese, pecans, celery and green onions.

3. Stir together mayonnaise, mustard and garlic in separate bowl. Add to chicken mixture. Stir well, cover and chill.
