Chewy Sesame Seed Bars

Ingredients
- 1 cup raw sesame seeds
- 1/4 cup raw sunflower seeds
- 1/4 cup raw pumpkin seeds
- 1/4 cup ground flax
- 1/4 cup unsweetened coconut flakes
- 2 tbs. chia seeds
- 1/2 cup raw honey (maple syrup?)
- 1/3 cup smooth organic peanut butter

Preparation
Step 1
Add all the dry ingredients to a large bowl. Heat the honey and peanut butter in the microwave on high heat for 20-25 second intervals until melted. Mix until smooth then add to the bowl of dry ingredients. With a large wooden spoon or spatula, mix all the ingredients until combined all the seeds and nuts are coated with the honey and peanut butter mixture. Transfer mixture into a shallow pan (I used a 12 by 5.5 by 2 inch biscotti pan) and firmly pack down with a spoon until uniform. Set in the fridge for 1-2 hours or until fully cooled and firm. Cut into desired portions.
*Additions: 1/4 cup dried goji berries (or other dried fruit), chocolate or carob chips, or slivered or finely chopped raw nuts of choice.
Storing these in the refrigerator will keep them semi-hard. Once you remove them from the fridge and if not eaten almost immediately they tend to get sticky.
