MICROWAVE WHITE CHOCOLATE AND ¼ CUP WHIPPING CREAM IN LARGE BOWL ON HIGH FOR 1 MINUTE. STIR AND MICROWAVE AGAIN FOR 20 SECOUNDS. STIR AND CONTINUE CYCLE UNTIL CHOCOLATE IS MELTED. COOL 20 MINUTES OR UNTIL ROOM TEMPERATURE, STIRRING OCCASIONALLY. BEAT REMAINING WHIPPING CREAM IN CHILLED BOWL IN ELECTRIC MIXER ON MEDIUM SPEED UNTIL SOFT PEAKS FORM. DO NOT OVERBEAT. FOLD ½ OF THE WHIPPED CREAM INTO WHITE CHOCOLATE MIXTURE. FOLD IN REMAINING WHIPPED CREAM JUST UNTIL BLENDED. SPOON INTO DESSERT DISHES. REFRIGERATE 2 HOURS OR UNTIL READY TO SERVE.
