Lazy Man’s Pierogi

My Notes: Made 02/05/02 - Used whole pound of bacon. Not real saucy-took a while to prep. All in all it turned out pretty good.

Ingredients
- 1 (16 oz) package rotelle pasta
- 1/2 lb bacon, chopped
- 2 onions, chopped
- 1/2 lb mushrooms, quartered
- 1 T Butter
- 1 (16 oz) can sauerkraut - rinsed and drained
- 2 (10.75 oz) cans condensed cream of mushroom soup
- Salt and pepper to taste

Preparation
Step 1
Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8-10 minutes or until al dente; drain. Preheat oven to 350 degrees.
Place bacon in a large, deep skillet. Cook over medium high heat until evenly browned. Stir in onions, and cook until translucent. In a separate pan, saute the mushrooms in butter.
In a large bowl, combine pasta, bacon, onion, mushrooms, sauerkraut and condensed soup. Season with salt and pepper. Pour into a 9x13 inch baking dish.
Bake in preheated oven for 45 minutes.
