Ingredients

  • 1 Whole Chicken, cut into pieces
  • 2 Sweet Potatoes, peeled, and chopped
  • 3 Sweet Onions, peeled and cut into quarters
  • 6 Carrots, peeled and cut lengthways
  • 2/3 cup Red Wine
  • 4 Tbsp Tomato Paste
  • 3 Sprigs of Thyme, leaves picked off
  • 1/2 tsp Dried Marjoram
  • 1/4 cup Red Wine Vinegar
  • 1/4 cup Water
  • Sea Salt
  • Freshly Ground Black Pepper

Step 1

Take out a bowl and mix together the red wine, tomato paste, thyme, marjoram and red wine vinegar. Season chicken with salt and pepper to your liking. Transfer the chicken into a marinating dish with the wine mixture and let the chicken marinate for around 30 minutes. Preheat your oven to 400 degrees F.
Take out a baking dish and put the carrots, onions and sweet potatoes inside. Pour water over the vegetables. Remove the chicken from the marinade and place the meat skin side up on top of the vegetables. Pour the marinade over the chicken. Use aluminum foil to cover the pan and roast for about 30 minutes. Remove the aluminum foil and roast for an additional 30 minutes. Remember to baste every 15 minutes.
