Ingredients

  • 1 lb. chopped raw shrimp
  • 3/4 cup panko
  • 2 eggs
  • 3 Tbsp minced scallions
  • 1 tsp lemon zest
  • 1 tsp salt
  • 1/2 tsp pepper

Preparation

Step 1

In a bowl combine all ingredients. Form 8 3/4 inch thick cakes. In a large skillet, heat 1/4 cup olive oil. in batches, cook the shrimp cakes over moderately high heat, turning once for four minutes
