  • 1 cup chopped green onion
  • 1 Tablespoon olive oil
  • 3 cups chicken broth
  • 1 pound caulfilfower flowerets
  • 1/4 cup flour
  • 1 1/2 cups shreddded
  • Monterey Jack cheese
  • a jar of roasted red bell peppers, coarsely chopped

Step 1

Saute the green onions in the olive oil until tender, about 3 minutes. Add chicken broth, and bring to a boil over medium-high heat. Add the cauliflower, return to boil, reduce heat to medium, and cook until almost tender, about 6 minutes. Remove 1 cup of the broth, and whisk the flour into it. Stir flour and broth mixture back into the soup. Bring to a boil, and cook, stirring, until thick, about 2-3 minutes. Remove from heat, add cheese, and the roasted red peppers.
