- MARINADE -
- 125 ml olive oil 1/2 cup
- 30 ml lemon juice 2 tbsp
- 15 ml minced garlic 1 tbsp
- 10 ml dried oregano, crushed 2 tsp
- 5 ml dried mint, crushed 1 tsp
- 5 ml black pepper 1 tsp
- pinch red pepper flakes -
- FETA TZATSIKI -
- 375 ml plain yogurt 1 1/2 cup
- 125 ml english cucumber, grated 1/2 cup
- 125 ml feta cheese, crumbled 1/2 cup
- 1 large clove garlic, minced 1
- 30 ml lemon juice 2 tbsp

Directions
Dividing evenly and alternating vegetables; thread tomatoes, mushrooms, red and green peppers and onions onto 12 bamboo skewers.
MARINADE: In a large nonmetallic dish; combine oil, lemon juice, garlic, oregano, mint, pepper and red pepper flakes; add skewers, turning to coat well. Chill for 3 to 6 hours, turning occasionally.
FETA TZATSIKI: In a serving bowl; combine yogurt, cucumber, feta, garlic and lemon juice; refrigerate.
Remove souvlaki from marinade. Grill over medium heat for 10 minutes or bake on greased baking sheet in 425 F (220 C) oven for 15 minutes. Serves with Feta Tzatziki.
