Ingredients

  • 1 2/3 cups Brown Rice Flour Mix
  • 1 1/4 teaspoons baking soda
  • 3/4 teaspoon xantham gum
  • 1 1/2 teaspoons ground ginger
  • 3/4 teaspoon cinnamon
  • 3/4 teaspoon salt
  • 1 large egg, lightly beaten
  • 1/2 cup granulated sugar
  • 1/2 cup molasses
  • 1/2 cup oil
  • 1/2 cup boiling water
  • Confectioners' sugar

Step 1

1) Preheat oven to 350 °F. Position rack in center of oven. Lightly grease a kugelhoph mold with cooking spray.

2) Place flour, baking soda, xantham gum, ginger, cinnamon, and salt in large bowl of electric mixer and mix at low speed until thoroughly combined.

3) Add egg, sugar, and molasses and mix until smooth; about 1 minute. Pour oil and boiling water over batter and mix at low speed until thoroughly combined.

4) Pour batter into prepared pan and bake in center of oven for 40 minutes or unti until center springs back when touched and a tester inserted in center of cake comes out clean (bake 35 minutes for a 8" X 8" pan.

5) Cool cake in pan on rack for 5 minutes. Use a small knife to cut around pan sides to loosen cake if necessary. Invert cake onto a rack and cool. Sift confectioners' sugar over cake and serve warm (or at room temperature) with applesauce.
