SALMON****Tossed Salad with Smoked Salmon and Capers 1 Picture

Ingredients

  • 2 cups mixed baby lettuce/arugula blend
  • 2 tbsp. thinly sliced red onion or shallot
  • 1/4 cup thinly sliced cucumbers, cut in half-moon shapes
  • 2 tbsp. capers
  • 2 oz. thinly sliced smoked salmon
  • 1 1/2 tbsp. preserved lemon dressing (Mediterranean Fresh)
  • 2 tbsp. olive oil croutons
  • salt, pepper and fresh or dried dill, to taste
  • 1 hard boiled egg, chopped (not in calorie count)

Step 1

* Toss greens, croutons and cucumber with dressing and plate. Top with shallots, capers, salmon, salt, pepper and dill, to taste.
