Ingredients
- 3 T white wine vinegar
- 3 T olive oil
- 2 cloves chopped garlic
- 1 T chopped thyme
- 2 t Dijon mustard
- 3/4 t salt
- 1/2 t pepper
- 1 lb. lean ground beef
- 1 egg, beaten
- 3/4 c Parmesan
- 1/2 c bread crumbs
- 8 baby artichokes
- 16 cherry tomatoes

Step 1
Heat grill. In bowl, whisk together vinegar, oil, garlic, thyme, mustard, salt & pepper until well blended. Set aside
In large bowl, mix together beef, egg, Parmesan, bread crumbs. Season with salt & pepper. Form into 24 meatballs, @ 1 1/2" in diameter.
Slice artichokes in half
Thread meatballs, artichokes & tomatoes on skewers. Grill on med-hi 12 min., rotating a few times.
