Ingredients
- 1 cup bulgar wheat
- 1 large bunch green onions
- 1 lb tomatoes
- 5-6 tablespoons lemon juice
- salt and pepper
- 1/2 teaspoon chili powder
- pinch cumin
- 1 teaspoon dried green mint (or a few chopped fresh mint leaves)
- 6 tablespoons olive oil
- 1 bunch parsley

Step 1
1. pour bulgar wheat into a bowl, cover with cold water and leave to swell for an hour, until grains are soft but still firm to bite.
2. wash and trim green onions. chop finely. wash and dice tomatoes.
3. drain bulgar and stir with a spoon. press for the water to drain. mix bulgar with green onion and tomato.
4. combine lemon juice, salt, pepper, chili powder, cumin and mint. mix with bulgar wheat and stir in oil. season to taste. wash fresh parsley and rip or coarsely chop.
salad tastes best chilled
