Ingredients

  • 1 1/2 c canned pumpkin
  • 1/2 c oil
  • 2 large eggs
  • 1 t vanilla extract
  • 1/2 c packed brown sugar
  • 1 1/2 c flour
  • 2 1/2 t pumpkin pie spice
  • 11 t baking powder
  • 1/2 t baking soda
  • 1/2 t salt

Preparation

Step 1

Heat oven to 350 and grease the bottom only of 12 muffin cups.

In a large bowl, combine the pumpkin, oil, eggs, vanilla and brown sugar. In a medium bowl whisk flour, pumpkin pie spice, baking powder, baking soda and salt. Add the flour mixture to the pumpkin mix, stirring until just combined.

Pour the batter into the muffin cups and bake until muffins are slightly puffed and golden brown, about 25 mins. Cool in the pan on a wire rack.
