Spiced and Charred Rib-Eye

Ingredients
- 1 (18-ounce) bone-in rib-eye steak (around 1 1/2 inches thick)
- 1 tablespoon kosher salt
- 1 tablespoon freshly cracked black pepper
- 1 teaspoon red pepper flakes
- 1 teaspoon granulated sugar
- 1 tablespoon canola oil

Preparation
Step 1
Remove steak from refrigerator and allow to come to room temperature.
In a small bowl, combine salt, pepper, red pepper flakes and sugar. Rub spice mixture all over steak, making sure to cover the whole surface.
Preheat grill to medium high.
Let steak sit for another 30 minutes with rub while allowing your grill to heat.
Once the grill is heated use a towel coated in oil, or a grill brush to brush canola oil onto the grill grates. Find the hottest part of the grill and add steak. It OK if there are flames lapping the steak initially, but if the continue, use a spray bottle to spray water onto any excessive flame-ups. Cook steak without moving or turning for 5-6 minutes per side, or until an instant-read thermometer reads 120-125 degrees F.
Remove the steak to a plate or cutting board and tent with aluminum foil to rest for 7-10 minutes.
Once rested, slice it thin and serve it warm.
Tip: Using bone-in steak helps to make you steak more flavorful, and makes it harder to overcook.
