Ingredients

  • 1 med onion, chopped
  • 2 garlic cloves, chopped
  • 1 Jalapeno pepper, seeded and chopped
  • 2 Tbsp. fresh chopped parsley
  • 1 Tbsp. lime juice
  • 1 1/4 tsp. ground cumin
  • 2 Tbsp. cornstarch
  • 2 15.5-oz. cans great northern beans, rinsed and drained
  • 1/4 cup water
  • 4 cup chicken broth
  • 2 cup cubed cooked chicken

Step 1

In a large sauce pan cook onion, jalapeno and garlic in oil until tender. Stir in beans, chicken broth, parsley, lime juice and cumin. Bring to a boil. Reduce heat and simmer for 10 minutes, stirring occasionally. Combine corn starch and water into a smooth paste, stir into chili. Add chicken and bring to a boil. Cook and stir for 2 minutes, or until thickened and hot.
