Ingredients

  • 1 lb ground round
  • 1 cup chopped onion
  • 1/2 cup chopped green pepper
  • 1/4 cup dry red wine or water
  • 1 Tbsp. chili powder
  • 1 tsp. sugar
  • 1 tsp. ground cumin
  • 1/4 tsp. salt
  • 1 garlic clove, minced
  • 1 15-oz. can kidney beans, undrained
  • 1 14.5-oz. can Mexican-style stewed tomatoes w/jalapeno peppers and spices, undrained
  • 6 Tbsp. reduced fat shredded cheddar cheese

Step 1

1. Cook the ground round and drain. Add chopped onion and next 7 ingredients (onion - garlic) and cook for 7 minutes or until onion is tender. Place meat mixture in a crock pot and stir in beans and tomatoes. If tomatoes are in large pieces, cut them into smaller ones. Cover with lid and cook on low for 4 hours. Sprinkle with cheese.
