  • 4 boneless skinless chicken breasts 4
  • 1 lime 1
  • 5 ml soy sauce 1 tsp
  • 4 stalks celery 4
  • 1 each 1 each medium red & green pepper 1
  • 1 large onion 1
  • 1 medium carrot 1
  • 7 ml each ground cumin & chili powder 1 1/2 tsp
  • 5 ml lemon pepper 1 tsp
  • 125 ml chicken broth 1/2 cup

Using meat mallet; pound chicken between plastic wrap to 3/8 inch (9 mm) thickness. Place chicken in glass dish; squeeze lime juice over all. Coat with soy sauce. Set aside.
Cut celery on angle. Cut peppers, onion and carrot into long thin strips. Combine vegetables with cumin, chili powder and lemon pepper; set aside.
Broil or barbeque chicken until no longer pink, 4 to 5 minutes per side.
Meanwhile, in a large nonstick skillet sprayed with nonstick cooking spray, cook vegetables, stirring until hot. Stir in chicken broth; cook until vegetables are tender, about 8 minutes. Serves over chicken.
