Tasty Rice

Ingredients

• Tasty Rice
• Metric Ingredient Imperial
• 8 slices of bacon 8
• 1 minced garlic clove 1
• 1 small onion, finely diced 1
• 500 ml tomatoes, peeled, seeded & chopped 2 cup
• 500 ml long grain rice 2 cup
• 1 L chicken stock 4 cup
• 500 ml tomato juice 2 cup
• 2 ml salt 1/2 tsp
• 1 ml pepper 1/4 tsp

Preparation

Step 1

Finely dice bacon and saute along with garlic and onion. Add tomatoes. Cook gently until most of the moisture is evaporated.
Stir in rice. Add chicken stock, tomato juice and seasonings. Cover and simmer until rice is tender and liquid has been absorbed.

Serves 6
