Grilled Chicken  Veggie Pasta Salad (Yummly) 1 Picture

Ingredients

  • 8 oz whole grain penne pasta
  • 1/4 cup mayonnaise
  • 2 tbs Italian Dressing
  • 8 ounces asparagus, trimmed
  • 1 large sweet on, thickly sliced into rounds
  • 1 medium zucchini, sliced lengthwise into thirds
  • 1 large bell pepper, quartered
  • 1/4 cup loosely packed fresh basil leaves, thinly sliced
  • 1 lb boneless skinless chicken breast halves

Preparation

Step 1

Cook pasta according to package directions; drain and rinse with cold water until completely cool. Combine with mayonnaise and basil in a large bowl. Add pasta and toss. (I didn't let cool)
Grill chicken and vegetables until chicken is thoroughly cooked and vegetables are tender. Cut warm vegetables into bite sized pieces and thinly slice chicken. Toss with Italian dressing in a large bowl. Add pasta and toss.
