Beef Roast and Beans - Instant Pot Slow Cooker

Ingredients
- 2 T oil
- 3-5 lb. beef roast seasoned with Cavenders Greek Seasoning (or just salt and pepper)
- Chopped onion
- 2 cups dry pinto beans
- Can of Rotel tomatoes (Optional)
- Spices - Salt, pepper, green chilis
- 4-6 cups Beef broth (or water)
- Instant Pot

Preparation
Step 1
Turn Instant Pot to Saute on High; add oil.
When IP reads "HOT", put in roast and brown on both sides. Remove from pot and set aside.
Add chopped onions. Stir for a bit until soft. Add water and deglaze pot. (scrape up cooked bits on bottom)
Put two cups dry pinto beans.
Mix in a can of Rotel and some green chilies and add seasonings to taste.
Place roast on top and add more seasonings.
Add water to cover beans and about half the roast. May need to add more water as it's cooking.
Turn crock pot on medium and cook until roast falls apart and beans are done.
Turn to low so spices can simmer.
Great the next day; good even for breakfast with fried egg on top and a tortilla so soak up juices!
